3/30: I'm no Rebekah

So...I've been working on cooking healthier the past few months.  I've gotten brave and tried some things I never thought I would.  Like quinoa.  And squash soup.  And steel cut oatmeal.  Some days I don't know who I am, and then I go and make banumpkin bread.  Then I feel like myself again.

This week I attempted something on a whole new level.  Smitten Kitchen's spicy squash salad with lentils.  I think I might have gone a little too Rebekah with this one.  (She is definitely the healthy cook in the family.)  I don't know. I think I might have done something wrong.  Using feta instead of goat cheese?  Omitting the smoked paprika because I didn't have any?  Or just trying to fix something healthier than I would ever like.  I'm not sure. 

All that to say, it didn't look too shabby, and if anyone loves butternut squash and lentils, there is a whole big Tupperware full in my refrigerator.

Three cheers for healthier eating! Although you're hearing from the girl who just bought half-off Halloween candy and is most excited by the banumpkin bread in this post...

I would probably eat that...i really have very little trouble eating anything as long as it is meat free...
